Chocolate cake

You can't really surprise anyone with a chocolate cake nowadays, can you. Yet, here is my default recipe for this humble treat. It is very moist, very chocolatey with a hint of coffee, incredibly easy and forgiving to make and I always have the ingredients on hand.

130 ml milk
130 ml flavourless vegetable oil
80 ml cold espresso or very strong coffee
2 eggs
250 ml sugar
1 teaspoon vanilla sugar
a pinch of salt
250 ml flour
80 ml Dutch cocoa powder
2 teaspoons baking powder

All the measurement are in ml, so you can use just one measuring cup and spare yourself some washing up.

Warm the oven to 180 C. Mix the milk, oil, coffee, eggs and sugars till de sugar is dissolved. Add the flour, cocoa powder, salt and baking powder and mix well. The batter will be quite thin. Pour it into a buttered tin, you can line it with baking paper eventually. Bake for 40-50 minutes, test with a wooden toothpick - it should come out quite clean, though not completely dry.
